  • ½ cup butter (room temperature)
  • 1 cup brown sugar
  • 1 large egg
  • 2 cups flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for topping)
  • ½ cup sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it thickens by half (20-30 minutes). Allow to cool.
  2. Preheat oven to 350°F and grease a 9×5 loaf pan.
  3. Cream together butter and brown sugar until fluffy; mix in egg and vanilla.
  4. Add reduced cider and dry ingredients; stir until just combined.
  5. Pour batter into prepared pan and bake for about 50 minutes or until a tester comes out clean.
