  • 1 cup apple cider
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1/4 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/3 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. In a saucepan over medium heat, reduce the apple cider until thickened to about half a cup.
  3. In a mixer, cream together butter and brown sugar until fluffy.
  4. Add vanilla and eggs one at a time; mix well.
  5. Combine applesauce and reduced apple cider in another bowl.
  6. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  7. Gradually add dry ingredients and apple cider mixture to the butter mixture alternately until blended.
  8. Mix granulated sugar and cinnamon; sprinkle over the top of the batter before baking.
  9. Bake for 35–40 minutes or until golden brown and a knife comes out mostly clean.
