  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and grease a 9” square baking dish.
  2. In a large pan, bring apple cider to a boil and reduce by half (about 5 minutes). Stir in diced butter until melted.
  3. In a bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Gradually mix in the boiled cider mixture. Fold in flour until just combined.
  5. Pour batter into the prepared dish and bake for 22-25 minutes or until golden and puffed up.
  6. Cool for five minutes before topping with butter and a cinnamon-sugar mixture.
