  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the apple filling: In a medium saucepan over medium heat, combine diced apples, apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, and salt. Cook until apples soften slightly.
  2. Make the dough: Mix water and cornstarch in one bowl; in another bowl, combine bread flour, sugar, yeast, and salt. Add milk, heavy cream, egg, vanilla extract, tangzhong mixture, and knead until smooth.
  3. Let it rise: Cover the dough and let it rise in a warm area until doubled in size (about an hour).
  4. Roll out & fill: Roll out dough into a rectangle; spread apple filling evenly over it. Roll tightly and slice into sections.
  5. Cut & bake: Place rolls in a greased baking dish to rise again for about 30 minutes before baking at 350°F (175°C) for about 30 minutes or until golden brown.
  6. Frost & serve: Allow rolls to cool slightly before spreading with cream cheese frosting.
