  • 175g unsalted butter (softened, for cupcakes and buttercream)
  • 175g light brown sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 350g icing sugar (for buttercream)
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk (for buttercream)

Instructions

  1. Prepare the apple filling by peeling and chopping apples, then cooking with light brown sugar, cornflour, and spices until tender.
  2. Make the crumble by mixing flour, sugar, and cinnamon with butter until crumbly; bake until golden.
  3. For the cupcakes, cream softened butter and sugar, add eggs one at a time, then fold in flour and spices.
