  • 3½ cups Granny Smith apples (peeled and finely chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together cooking oil and sugar until combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  2. In another bowl, mix flour, baking soda, cinnamon, and salt. Gradually add to wet ingredients until just combined.
  3. Gently fold in chopped apples and pecans.
