  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter (cold, cut into cubes)
  • 110 g water
  • 1 kg apples (Pink Lady or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water
  • 5 tbsp almond flour (or other finely ground nuts)
  • Vanilla ice cream (for serving)

Instructions

  1. Prepare the Crust: Mix flour, sugar, and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add water until the dough forms.
  2. Chill the Dough: Wrap in plastic and refrigerate for at least 30 minutes.
  3. Make the Apple Filling: Peel and slice apples. In a pan over medium heat, melt butter, then add apples, brown sugar, cinnamon, cornstarch, salt, and water. Cook until slightly softened.
  4. Roll Out the Dough: On a floured surface, roll out the chilled dough to fit your pie dish.
  5. Assemble Your Pie: Place half of the dough in the pie dish, fill with apple mixture, and cover with remaining dough.
  6. Bake: Preheat oven to 180°C (350°F) and bake for about 80 minutes until golden brown.
  7. Serve Warm: Let cool slightly before serving with scoops of vanilla ice cream.
