  • 1 1/2 cups butter, at room temperature
  • 3/4 cup packed light brown sugar
  • 3/4 cup granulated white sugar
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cups apricot jam
  • Powdered sugar, for sprinkling

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a 9×13 inch pan with nonstick spray.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy. Mix in the vanilla extract and salt, then gradually add the flour until smooth.
  3. Divide the dough in half; chill one half for 30 minutes. Press the other half into the prepared pan as the crust and bake for about 20 minutes until lightly golden.
  4. Stir the apricot jam until smooth, then spread it evenly over the baked crust. Crumble the chilled dough over the jam and return to the oven; bake for an additional 30 minutes until golden.
  5. Allow to cool completely before cutting into bars and dusting with powdered sugar.
