  • 12 oz penne or fusilli pasta
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1 lemon, juiced and zested

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about a minute until fragrant.
  3. Add red onion and bell pepper; cook for 3-4 minutes until softened.
  4. Stir in cherry tomatoes and Kalamata olives; cook for an additional couple of minutes until tomatoes begin to break down.
  5. Reduce heat to low; add cooked pasta to the skillet and toss gently with the veggies.
  6. Fold in crumbled feta cheese along with chopped basil, parsley, and oregano.
  7. Season with salt and black pepper according to taste.
  8. Squeeze fresh lemon juice over everything and add lemon zest.
  9. Let it rest for a few minutes before serving warm or at room temperature.
