  • 3 cups butternut squash, peeled, seeded, and cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (cajun or turkey sausage)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat oven to 200°C. Toss butternut squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender.
  2. On another baking sheet, toss Brussels sprouts with olive oil, salt, and pepper. Roast for 20-30 minutes until golden brown.
  3. Cook bow tie pasta according to package directions. Drain and reserve some pasta water.
  4. In a skillet over medium heat, brown sliced smoked sausage in olive oil; remove from skillet.
  5. In the same skillet, sauté minced garlic in butter until fragrant. Add cooked pasta, seasoning with salt, pepper, and smoked paprika.
  6. Combine roasted vegetables and sausage into the skillet; mix well.
