  • 2 tablespoons plus 2 teaspoons chile powder
  • 3 tablespoons cumin
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 3 cups chopped onion
  • 3 tablespoons minced garlic
  • 3 (15-ounce) cans white beans (drained)
  • 2 (4-ounce) cans chopped green chiles
  • 2 teaspoons oregano
  • 46 cups low-salt chicken broth
  • 6 cups shredded cheese (Monterey Jack and cheddar)
  • 2 cups sour cream

Instructions

  1. Preheat oven to 350°F. Place chicken breasts in a roasting pan, drizzle with olive oil, season with chile powder, cumin, salt, and cayenne pepper. Roast for about 30 minutes until cooked through. Shred or chop into bite-sized pieces.
  2. In a large pot, heat remaining olive oil over medium heat. Sauté onions and garlic for about 5 minutes until tender.
  3. Add white beans, shredded chicken, green chiles, oregano, remaining spices, and pour in chicken broth. Simmer gently for about 20 minutes.
  4. Remove from heat and stir in cheese and sour cream gradually until melted.
