  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices cooked chicken or turkey, crumbled
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, crumbled chicken or turkey, chopped jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
  2. Lay an eggroll wrapper on a clean surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling, fold in the sides towards the center, and roll tightly to seal.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C).
  4. Fry the eggrolls seam side down in batches for about 3-4 minutes or until golden brown and crispy.
  5. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.
