  • 2 teaspoons Dijon mustard
  • 4 cloves minced garlic
  • 3 tablespoons soy sauce or coconut aminos
  • 3 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • 3 large zucchini
  • 8 ounces feta cheese
  • Salt and black pepper to taste

Instructions

  1. Marinate the steak by mixing Dijon mustard, minced garlic, onion powder, soy sauce, olive oil, balsamic vinegar, salt, and pepper in a plastic bag or shallow dish. Add the steak and marinate for at least 2 hours (or overnight).
  2. Preheat the grill to high heat (around 450°F). Remove the marinade from the steak and set aside for later use.
  3. Grill the flank steak for about 3-5 minutes per side until it reaches medium-rare (135°F internal temperature).
  4. Brush zucchini slices with olive oil and sprinkle with salt; grill alongside steak for about 2-3 minutes on each side until tender and charred.
  5. While resting the steak for 10 minutes after grilling, bring reserved marinade to a boil in a saucepan until thickened (about 2-3 minutes).
  6. Blend feta cheese with heavy cream or milk until smooth for whipped feta.
  7. Serve sliced steak topped with whipped feta and grilled zucchini drizzled with balsamic glaze.
