  • 1/4 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup mashed ripe bananas (about 2 small bananas)
  • Optional: 1/2 cup chopped walnuts
  • For the Cream Cheese Glaze:
  • 4 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a larger bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Fold in the mashed bananas until well blended.
  6. Gradually mix in the dry ingredients until just combined; gently fold in walnuts if using.
  7. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for about 10-12 minutes or until edges are lightly golden; let cool on the baking sheet for five minutes before transferring to wire racks.
  9. For the glaze, beat cream cheese until smooth; gradually mix in powdered sugar, milk, and vanilla until creamy.
  10. Once cookies are cooled completely, drizzle or spread glaze over each cookie.
