  • 2 shallots, peeled and roughly chopped
  • 1/4 cup lemongrass, from white inner part of 3 stalks
  • 3 tablespoons lime juice
  • 3 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 inch ginger, peeled (or 1 tsp ground)
  • 5 cloves garlic, peeled (or 1 teaspoons powder)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon vegetable or canola oil
  • 1 tablespoon Asian chili sauce, like Sambal Oelek or Sriracha
  • 1 tsp EACH ground coriander, Chinese 5 spice
  • ½ cup rice vinegar
  • ½ cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup matchstick carrots (about 23 carrots)
  • 1 cup daikon, cut into matchsticks (may substitute radishes)
  • 3/4 cup mayonnaise
  • 13 teaspoons Asian chili sauce, like Sambal Oelek or Sriracha
  • 68 soft French baguettes, about 8-inches each (or use long crunchy rolls)
  • 1 English cucumber, thinly sliced lengthwise
  • 46 jalapenos, thinly sliced
  • 1 cup chopped fresh cilantro leaves

Instructions

  1. In a bowl, mix shallots, lemongrass, lime juice, maple syrup, brown sugar, ginger, garlic, sesame oil, vegetable oil, and chili sauce to create the marinade.
  2. Marinate the beef in the mixture for at least one hour.
  3. Prepare the pickled vegetables by dissolving rice vinegar, water, sugar, and salt over medium heat before adding carrots and daikon.
  4. Cook the marinated beef on a grill or skillet until desired doneness (5-7 minutes per side).
  5. Assemble sandwiches by spreading mayonnaise mixed with chili sauce on baguettes and layering with sliced beef and pickled veggies.
