  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Fresh parsley (optional)

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion for about 3-4 minutes until softened.
  2. Add ground beef to the skillet, breaking it apart as it cooks until browned. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for about one minute until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper. Mix well.
  5. Bring to a boil briefly then reduce heat to low. Cover and simmer for 18-20 minutes until rice absorbs broth.
  6. In a separate saucepan over low heat, melt remaining butter and whisk in milk, cheddar cheese, and Parmesan until smooth.
  7. Pour cheese sauce over the beef and rice mixture in the skillet, stirring gently to combine.
  8. Cook uncovered for 2 more minutes before serving warm with optional parsley garnish.
