Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in olive oil over medium-high heat for 5-7 minutes on each side until golden brown. Set aside.
  2. In a saucepan, boil chicken broth with salt. Add rice, reduce heat, cover tightly, and simmer for 15-20 minutes until tender.
  3. In the same skillet used for the chicken, melt butter over medium heat and whisk in flour to create a roux. Gradually add milk and reserved broth until smooth. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  4. Return chicken to the skillet and spoon sauce over it. Allow to meld for a few minutes before serving atop the rice.
