  • 2 cups cooked chicken breast, diced
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. In a skillet over medium heat, cook turkey bacon until crispy. Remove from heat and let cool before crumbling.
  2. Season raw chicken with salt and pepper if using; cook in the same skillet until browned (about 6–8 minutes per side). Let cool and dice.
  3. In a mixing bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, garlic powder, lemon juice, salt, and pepper until smooth.
  4. In a large bowl, combine romaine lettuce, cherry tomatoes, diced chicken, and crumbled bacon. Pour dressing over the top and toss gently.
