  • 1 cup plain bread crumbs
  • ½ cup milk
  • 2 eggs
  • 1 cup onions (diced)
  • 1 cup bell pepper (diced)
  • 1 jalapeño (diced)
  • ¼ cup BBQ sauce
  • 1 cup apricot jam
  • ¼ cup dark brown sugar
  • 1 tbsp sriracha
  • ¼ cup water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix ground beef, bread crumbs, milk, eggs, diced onions, bell pepper, jalapeño, and spices until combined.
  3. Shape the mixture into a loaf on a baking sheet lined with parchment paper.
  4. In a saucepan, combine apricot jam, brown sugar, sriracha, BBQ sauce, and water over medium heat to create the glaze.
  5. Pour half of the glaze over the meatloaf and bake for approximately 75 minutes until the internal temperature reaches 160°F (70°C).
  6. Let rest for 10 minutes before slicing and serve with remaining glaze.
