  • 1 spaghetti squash (about 23 pounds)
  • 4 tablespoons olive oil
  • 1 ½ cups cherry tomatoes
  • 3 cloves garlic (minced)
  • 1 shallot (minced) or 2 tablespoons onion
  • 1 package (150g) Boursin cheese
  • ¼ cup chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400ºF (204ºC). Cut the spaghetti squash in half lengthwise and remove the seeds. Brush each half with 1 tablespoon of olive oil and season with salt and pepper. Place cut side down on a baking sheet lined with parchment paper.
  2. Roast the squash in the oven for about 30 minutes until tender.
  3. While the squash roasts, combine cherry tomatoes, minced garlic, shallot (or onion), remaining olive oil, salt, and pepper in a bowl. Toss well to coat.
  4. After 30 minutes, flip the squash cut side up and fill each half with the tomato mixture. Cut Boursin cheese in half and place it in the center of each half.
  5. Increase oven temperature to 425ºF (218ºC) and return the squash to roast for an additional 15 minutes until tomatoes burst and cheese melts.
  6. Remove from oven, shred spaghetti strands with a fork while mixing in fresh basil, then serve.
