2 medium broccoli heads (about 1 lb)
1 large carrot (grated or julienned)
1 apple (cored and chopped)
1/2 small red onion (thinly sliced)
1/2 cup toasted pecans or walnuts
1/2 cup craisins or raisins
1/2 cup mayonnaise
1/2 cup sour cream
2 Tbsp lemon juice
1/2 Tbsp sugar
1/4 tsp sea salt
1/8 tsp black pepper
Instructions
Toast the nuts in a skillet over medium-high heat for about 4-5 minutes until golden brown. Coarsely chop them once cooled.
Chop the broccoli into bite-sized pieces, grate the carrot, chop the apple, and thinly slice the onion. Combine these ingredients in a large bowl with the nuts and dried fruit.
In a separate bowl, mix mayonnaise, sour cream, lemon juice, sugar, salt, and pepper to create the dressing.
Pour the dressing over the salad mixture and gently toss until everything is well coated.
