  • 5 tablespoons butter
  • 1/4 teaspoon vanilla extract
  • 10 cups mini vegan marshmallows (divided)
  • 6 cups Rice Krispies cereal (cinnamon sugar flavored)
  • 1/2 teaspoon fine sea salt
  • 1/2 can dulce de leche

Instructions

  1. Prepare a 9×9-inch pan by spraying it with non-stick spray and lining it with foil or parchment paper.
  2. In a large pot over medium heat, melt the butter until golden brown, watching carefully to avoid burning.
  3. Remove from heat and mix in the sea salt and 8 cups of mini vegan marshmallows until melted and smooth. If needed, return to low heat to finish melting.
  4. Stir in vanilla extract and combine with Rice Krispies in a large bowl until evenly coated.
  5. Fold in the remaining mini vegan marshmallows for gooey pockets.
  6. Layer half of the mixture into the prepared pan, drizzle with dulce de leche, then top with the remaining mixture and press lightly.
  7. Allow to cool completely before slicing into squares.
