  • 3/4 cup light brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter
  • 2 1/2 tablespoons milk

Instructions

  1. Cream together unsalted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract; mix well.
  2. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually mix dry ingredients into the wet mixture until combined.
  3. Chill the dough for at least one hour.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Prepare filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth.
  6. Scoop chilled dough (about 1/4 cup), create a well in half, fill it with the cinnamon mixture, cover with the other half of dough, pinch seams closed.
  7. Bake for 11-13 minutes or until lightly golden brown.
