  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix chicken with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Coat chicken with half the buffalo sauce and place on a lined baking sheet.
  4. Bake for 20-25 minutes until cooked through (165°F internal temperature).
  5. Shred the chicken and toss with remaining buffalo sauce.
  6. Prepare rice according to package instructions or sauté cauliflower rice until tender.
  7. Assemble bowls starting with rice and topped with shredded chicken.
  8. Add celery, cherry tomatoes, sliced avocado, and drizzle with ranch dressing.
