  • ½ teaspoon smoked paprika
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup buffalo sauce
  • 2 tablespoons vegetable oil (or avocado oil)
  • 6 cups shredded romaine lettuce
  • ½ small red onion, thinly sliced
  • 1 cup grated carrot
  • 3 stalks celery, sliced
  • 2 cups cherry tomatoes, halved
  • 1 cup ranch dressing (divided)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, oregano, thyme, salt, and black pepper.
  2. Heat vegetable oil in a skillet over medium heat. Cook seasoned chicken until golden brown on both sides.
  3. Add buffalo sauce during the last few minutes of cooking to ensure flavor absorption.
  4. While the chicken cooks, chop vegetables: slice red onion, grate carrots, chop celery, and halve cherry tomatoes.
  5. In a large bowl or platter, layer shredded romaine lettuce and top with chopped veggies.
  6. Slice cooked chicken into strips and place on top. Drizzle ranch dressing over the salad before serving.
