  • 2 gala apples (peeled, cored, and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (chopped)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix cubed butternut squash, diced apples, cinnamon, vanilla extract, and brown sugar until combined.
  3. Season with salt and black pepper.
  4. Transfer the mixture to a baking dish; scatter butter pieces on top. Cover with a lid or foil and bake for 15 minutes.
  5. After 15 minutes, add raisins, cranberries, and nuts; gently toss to combine. Return to the oven for another 15 minutes until the squash is tender.
