  • 1 lb boneless skinless chicken breast (cut into 1-inch pieces)
  • 6 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced)
  • 1/2 large onion (diced)
  • 1 large bell pepper (diced)
  • 1 medium head cabbage (chopped or coarsely shredded)
  • 2 medium carrots (shredded)
  • 1/4 cup coconut aminos
  • 2 tbsp honey
  • 2 tsp toasted sesame oil
  • 2 tbsp olive oil (divided)
  • 1 tsp sea salt (divided)
  • 1/2 tsp black pepper (divided)

Instructions

  1. Pat the chicken pieces dry with paper towels. Season them evenly with 1/2 teaspoon of sea salt and 1/4 teaspoon of black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and sear them for about 4-6 minutes until golden brown.
  3. Reduce heat to medium and add another tablespoon of olive oil. Toss in minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  4. Add diced onions and bell peppers into the pan. Cook them for about 5-7 minutes until soft and slightly caramelized.
  5. Whisk together coconut aminos and honey in a small bowl.
  6. Increase heat back up to medium-high. Add chopped cabbage and shredded carrots along with your coconut aminos mixture. Stir fry for about 3-5 minutes until cabbage is tender.
  7. Add your seared chicken back into the pan with all those lovely veggies. Cook for an additional minute or two until warmed through.
  8. Finally, stir in toasted sesame oil and garnish with sliced green onions and sesame seeds before serving.
