  • 3 chicken breasts, cut into small strips
  • 13 tbsp Cajun seasoning
  • 1 tsp salt
  • 1 tbsp olive oil
  • ½ tbsp butter
  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste
  • 1 cup (200g) orzo pasta
  • 1 cup (240ml) chicken broth
  • 1 cup (30g) shredded spinach
  • ¼ cup (60ml) heavy cream
  • 3 tbsp grated parmesan cheese

Instructions

  1. Season chicken strips with Cajun seasoning and salt. Heat olive oil and butter in a large pan over medium heat. Cook chicken until golden brown.
  2. Add diced onion, minced garlic, sun-dried tomatoes, and tomato paste to the pan. Sauté for about 5 minutes until onions are softened.
  3. Stir in the orzo pasta for one minute, then add chicken broth. Bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally.
  4. Once orzo is nearly cooked, stir in shredded spinach until wilted.
  5. Mix in heavy cream and grated parmesan cheese until combined. Adjust seasoning if needed before serving.
