  • 4 cups granulated sugar (plus extra for rolling)
  • 4 cups water (plus extra for blanching)

Instructions

  1. Scrub the oranges thoroughly and slice them crosswise into ⅛-inch thick slices, discarding the ends.
  2. Blanch the orange slices in boiling water for about 10 minutes. Transfer them to an ice water bath to halt cooking.
  3. In a clean pot, dissolve sugar in water over medium heat until boiling to create syrup.
  4. Drain blanched slices and immerse them in the boiling syrup. Reduce heat and simmer for 45-60 minutes until translucent, stirring every 15 minutes.
  5. Place slices on wire racks over cookie sheets; bake at 175°F for about 30 minutes. Roll in sugar before returning to bake for another hour until dry.
  6. Cool completely before storing in an airtight container.
