  • 1 tsp ground cinnamon
  • 1/4 tsp ground all spice
  • 100 g granulated sugar
  • 100 g dark brown sugar
  • 200 g grated apples
  • 110 g vegetable oil
  • 2 eggs
  • 140 g sour cream
  • 1 tsp vanilla extract
  • 90 g granulated sugar (for caramel sauce)
  • 1 tbsp water (for caramel sauce)
  • 25 g butter (for caramel sauce)
  • 100 g heavy cream (for caramel sauce)
  • Pinch of salt (for caramel sauce)
  • 100 g butter (for frosting)
  • 165 g powdered sugar
  • 23 tsp caramel (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Prepare the caramel sauce: In a saucepan, combine granulated sugar and water over medium heat. Stir until dissolved, then simmer without stirring until golden brown. Remove from heat and carefully whisk in butter, heavy cream, and salt.
  2. Preheat the oven to 180°C (350°F). Grease two round cake pans.
  3. In one bowl, mix dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and allspice. In another bowl, combine sugars, grated apples, vegetable oil, eggs, sour cream, and vanilla extract.
  4. Gradually mix dry ingredients into wet until just combined.
  5. Divide batter between prepared pans and bake for about 45 minutes or until a toothpick comes out clean.
  6. For the buttercream: Beat room-temperature butter until fluffy. Gradually add powdered sugar then mix in caramel sauce and vanilla extract.
  7. Once cooled, layer the cake with buttercream and top with more caramel sauce.
