  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 3 medium Granny Smith apples (peeled and diced)
  • 1 cup granulated sugar (divided)
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/4 tsp cinnamon
  • 1/4 cup all-purpose flour
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon; press into the bottom of the prepared pan.
  3. Beat cream cheese until smooth; mix in sugar, eggs, and vanilla extract.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg.
  5. Layer half of the cheesecake mixture over the crust, add apple filling, then top with remaining cheesecake mixture.
  6. For crumble topping, mix flour and brown sugar with cold cubed butter until crumbly; sprinkle over the cheesecake layers.
  7. Bake for about 45 minutes or until slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
  8. Drizzle with homemade caramel sauce before serving.
