  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1¼ cups all-purpose flour
  • 1¼ cups old-fashioned oats
  • ½ cup toffee bits
  • 14 caramels (for filling)
  • Flaked salt (for topping)

Instructions

  1. In a stand mixer, beat the room-temperature butter with dark brown and granulated sugars until light and fluffy (about 3–4 minutes).
  2. Add the egg and vanilla extract, mixing until smooth.
  3. Gradually incorporate baking powder, baking soda, salt, and flour; mix until just combined. Fold in oats and toffee bits.
  4. Scoop dough into balls (about 3 tablespoons each) and place a caramel in the center of each ball. Chill in the fridge for at least 2 hours.
  5. Preheat oven to 365°F (185°C). Line baking sheets with parchment paper.
  6. Place cookie balls on sheets, sprinkle with flaked salt, and bake for 10–12 minutes until golden around the edges.
  7. Allow cooling slightly before enjoying.
