  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups jasmine rice
  • Salt and pepper to taste

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear the chicken thighs skin-side down for about 5-7 minutes until golden brown.
  3. Flip the chicken and add soy sauce, brown sugar, ginger, and garlic to the pot; stir to combine.
  4. Pour in the chicken broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes until fully cooked.
  5. Meanwhile, rinse jasmine rice under cold water. In a separate pot, combine rinsed rice with 4 cups of water, bring to boil, then cover and cook on low for 15-20 minutes until fluffy.
  6. Optional: To thicken the broth, mix cornstarch with water and stir into the pot during the last few minutes of cooking.
  7. Serve the sliced chicken over rice with broth ladled on top.
