  • 1 pound lean ground turkey
  • 1 medium yellow onion, chopped
  • 23 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper or zucchini, chopped
  • 4 cups cauliflower rice (fresh or frozen)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • ½ cup chicken broth or vegetable broth
  • Soy sauce or coconut aminos

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent (4-5 minutes). Stir in minced garlic for another minute.
  2. Add ground turkey; break it apart while cooking until browned (7-10 minutes). Drain excess fat if necessary.
  3. Stir in bell peppers and spices (smoked paprika, cumin, oregano, red pepper flakes); season with salt and pepper. Cook until peppers soften (5-7 minutes).
  4. Mix in diced tomatoes and chicken broth; bring to a simmer and cover for 10-15 minutes.
  5. While simmering, prepare cauliflower rice according to package instructions or sauté fresh riced cauliflower until tender-crisp.
  6. Combine the turkey mixture with the cooked cauliflower rice; drizzle with soy sauce or coconut aminos.
  7. Serve topped with fresh herbs like cilantro or parsley.
