Ingredients

Scale
  • 2 large russet potatoes
  • Olive oil for drizzling
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup milk (whole or 2%)
  • ¼ tsp ground cayenne pepper
  • ¼ tsp garlic powder
  • 5.5 ounces freshly grated medium cheddar cheese
  • 2 cups finely chopped broccoli florets

Instructions

  1. Preheat the oven to 400°F (200°C). Wash the russet potatoes, pat them dry, pierce several times with a fork, drizzle with olive oil, and sprinkle with salt. Bake directly on the rack for about 50 minutes until soft.
  2. While the potatoes bake, melt butter in a medium saucepan over medium heat. Whisk in flour until smooth, then gradually add milk while whisking continuously until thickened. Stir in cayenne pepper, garlic powder, and salt.
  3. Remove from heat and mix in grated cheddar cheese until melted. Fold in chopped broccoli.
  4. Once potatoes are done, slice them open without cutting through and fluff the insides. Spoon the creamy broccoli cheese sauce generously over each potato.
