  • 23 large zucchinis (sliced into ½-inch rounds)
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 2 tbsp unsalted butter (melted)
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh herbs (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the zucchini into ½-inch rounds and sprinkle with sea salt. Let sit for 15 minutes to draw out moisture.
  3. In a small pan over low heat, melt the unsalted butter and add minced garlic, cooking until fragrant (about one minute).
  4. Brush both sides of the zucchini rounds with olive oil and season with black pepper and Italian seasoning.
  5. Arrange on the baking sheet and roast for 15-20 minutes until tender.
  6. Remove from the oven, brush generously with garlic butter, then top with mozzarella and Parmesan cheeses. Bake for an additional 5-7 minutes until bubbly.
