  • 1 tablespoon olive oil
  • 1 cup finely diced mushrooms
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 bag (10 oz) baby spinach
  • 8 oz cream cheese
  • 1½ cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3 green onions, sliced
  • Salt and black pepper, to taste
  • 1 baguette
  • 3 tablespoons butter
  • 3 garlic cloves, minced
  • Grated Parmesan cheese
  • Fresh basil or parsley, torn

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the baguette into four sections and hollow out each piece.
  3. Sauté mushrooms in olive oil until golden, then add artichokes and wilt spinach.
  4. In a bowl, mix cream cheese, mozzarella, cheddar, green onions, salt, and pepper with sautéed veggies.
  5. Fill each hollowed baguette section with the cheesy mixture and slice into 1-inch pieces.
  6. Brush melted butter mixed with minced garlic over each piece before wrapping loosely in foil.
  7. Bake for 15 minutes covered, then uncover for an additional 5 minutes until golden brown.
