  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub and pierce the potatoes with a fork. Rub them with olive oil, salt, and pepper.
  3. Bake the potatoes on a baking sheet for about 45 minutes until tender.
  4. While baking, cook the ground beef in a skillet over medium heat until browned. Drain excess fat and stir in taco seasoning with water; simmer for five minutes.
  5. Once baked, cut slits into each potato and fill them with the beef mixture.
