  • 1 cup mascarpone cheese (room temperature)
  • â…“ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed coffee (cooled)
  • 1 tsp almond extract
  • 1 package (about 7 oz) ladyfinger cookies (savoiardi)
  • 1 ½ cups cherry preserves or cherry pie filling
  • ½ cup fresh cherries, pitted and halved (plus more for topping)
  • Unsweetened cocoa powder (for dusting)
  • Shaved chocolate or sliced almonds (optional)

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Gently fold in the mascarpone cheese, powdered sugar, and vanilla extract until everything is smooth and fluffy.
  2. In a shallow bowl, combine your cooled coffee with almond extract.
  3. Quickly dip each ladyfinger into your coffee mixture and line them up at the bottom of a 9×9-inch dish.
  4. Spread half of your mascarpone cream mixture over the ladyfingers.
  5. Spoon half of your cherry preserves evenly over the cream layer. Top this off with fresh cherry halves.
  6. Repeat the layers again: more dipped ladyfingers followed by the remaining cream and then the rest of your cherry mixture.
  7. Cover your dish and refrigerate it for at least six hours or preferably overnight.
  8. Dust the top generously with cocoa powder before serving, and decorate with fresh cherries or chocolate shavings as desired.
