  • ¼ cup avocado oil
  • 3 tablespoons lime juice
  • 1 cup long-grain white rice
  • 1 head romaine lettuce (chopped)
  • 1 cup tomatoes (diced)
  • 1 avocado (chopped)
  • 1 cup frozen corn (thawed)
  • 1 can black beans (rinsed and drained)

Instructions

  1. Marinate the chicken: In a bowl, combine avocado oil, lime juice, chopped chipotle chilis, adobo sauce, garlic powder, and salt. Add chicken strips, toss to coat, cover, and refrigerate for at least 2 hours.
  2. Cook the chicken: Heat a large pan over medium-high heat and cook the marinated chicken for about 5 minutes until fully cooked through.
  3. Prepare the rice: In a pot of boiling water with salt, add rinsed rice. Cover and simmer for 15-18 minutes until water is absorbed. Fluff with a fork and mix in lime zest and cilantro.
