  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 ½ lbs Yukon gold potatoes (cubed)
  • 1 cup half-and-half
  • 1 ½ cups cheddar cheese (shredded)

Instructions

  1. In a large pot over low heat, cook diced chicken seasoned with salt and pepper until golden brown on both sides (about 6 minutes). Remove from pot and set aside.
  2. In the same pot, sauté diced onion, carrots, and celery for about five minutes until tender.
  3. Add minced garlic and cook for an additional minute.
  4. Sprinkle flour over the mixture and stir for two minutes until blended.
  5. Gradually add chicken broth while stirring to prevent lumps; then add half-and-half.
  6. Add cubed potatoes back into the pot; bring to a boil then simmer until fork-tender (about 20 minutes).
  7. Stir in shredded cheese until melted; season to taste before serving.
