Ingredients

Scale
  • 1/4 cup all-purpose flour
  • 3/4 cup water
  • 3 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 3/4 teaspoon fine sea salt
  • 1/3 cup heavy cream
  • 1/3 cup whole milk
  • 1 egg
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 1/2 cup mini chocolate chips
  • 8 tablespoons unsalted butter
  • 1/2 cup light brown sugar (packed)
  • 1/8 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup mini chocolate chips
  • 4 tablespoons unsalted butter
  • 1 ounce cream cheese
  • 1 cup powdered sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla paste or extract

Instructions

  1. Prepare the Tangzhong: In a saucepan, mix 1/4 cup of flour with 3/4 cup of water over medium heat until thickened. Let it cool.
  2. Make the Dough: In a mixing bowl, combine 3 ½ cups flour, sugar, yeast, and salt. In another bowl, whisk together heavy cream, milk, egg, and vanilla. Combine both mixtures along with Tangzhong to form a soft dough; knead until smooth.
  3. Let It Rise: Cover dough in a greased bowl and let it rise in a warm spot until doubled—about an hour.
  4. Prepare Filling: Mix softened butter with mini chocolate chips.
  5. Roll Out Dough: Roll the dough into a rectangle and spread the filling evenly on top. Roll tightly into a log.
  6. Slice & Arrange: Cut into 12 pieces and place them in a greased baking dish to rise for another half hour.
  7. Bake: Preheat oven to 350°F (175°C) and bake for about 30 minutes until golden brown.
  8. Make Glaze: While rolls cool slightly, mix room temperature butter and cream cheese until smooth; add powdered sugar and heavy cream to achieve desired consistency.
  9. Drizzle & Enjoy: Once slightly cooled, drizzle glaze over rolls and serve warm.
