  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 2 cups heavy cream (divided)
  • 3.5 oz dark chocolate (chopped)
  • 4.5 oz white chocolate (chopped)
  • 5 oz milk chocolate (chopped)
  • ⅓ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). In a bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  2. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Dissolve espresso powder in hot water and mix into the wet ingredients.
  3. Combine wet and dry ingredients until blended. Divide batter between two greased 8-inch round pans and bake for about 35 minutes or until a toothpick comes out clean. Cool completely.
  4. For the mousse: Warm 1 cup of cream with vanilla in a saucepan. Whisk egg yolks with sugar and cornstarch; temper with warm cream before returning to heat until thickened.
  5. Divide custard between two bowls; stir in dark chocolate in one and white chocolate in the other until melted.
  6. Whip remaining cream to stiff peaks; fold into each chocolate mixture.
  7. Assemble: Layer cake with dark mousse first, then white mousse. Chill for 30 minutes after each addition.
  8. For ganache: Heat cream until steaming; pour over chopped milk chocolate and stir until smooth.
  9. Top the assembled cake with ganache and let set before serving.
