  • 1 cup milk (dairy or non-dairy)
  • 1 3/4 cups white flour (+ 3/4 cup, separated)
  • 1/4 cup dark cocoa powder
  • ¼ cup vegetable oil or melted coconut oil
  • ¼ cup white sugar
  • ½ tbsp instant active dry yeast (about ½ a package)
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 3/4 cup creamy peanut butter
  • 23 tbsp sugar
  • 1/4 cup chocolate chips
  • 4 oz cream cheese (at room temperature)
  • 4 tbsp unsalted butter (at room temperature)
  • 12 tbsp peanut butter (to taste)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • pinch of salt
  • chopped peanut butter cups

Instructions

  1. In a large pot, heat milk with oil and sugar to 120°F. Sprinkle yeast on top and let it bloom.
  2. Mix in flour and cocoa powder; cover and let rise for one hour.
  3. Add salt, baking powder, baking soda, and more flour as needed; knead until smooth.
  4. Roll out dough, spread peanut butter, sprinkle sugar and chocolate chips; roll tightly.
  5. Slice rolls and place them in a greased pan; let rise again.
  6. Preheat oven to 375°F; bake rolls for 15-18 minutes until fluffy.
  7. While baking, prepare frosting by mixing cream cheese with peanut butter and powdered sugar.
  8. Cool rolls before frosting generously.
