  • 1/2 cup feta cheese (crumbled)
  • 1/2 cup candied pecans (roughly chopped)
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon shallot (minced)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, place 7 cups of mixed spring greens as the base.
  2. Add 1 1/4 cups of orange segments, 1/2 cup of pomegranate seeds, 1/2 cup of crumbled feta cheese, and 1/2 cup of roughly chopped candied pecans to the greens.
  3. In a small bowl, whisk together 1/3 cup of olive oil, 1 tablespoon of honey, 2 teaspoons of Dijon mustard, 2 tablespoons of apple cider vinegar, and minced shallot. Season with salt and pepper.
