  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a bowl, combine lime juice, olive oil, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper to create the marinade.
  2. Marinate the flank steak in the mixture for at least 30 minutes (up to 4 hours).
  3. Cook rice according to package instructions.
  4. Heat black beans in a saucepan over medium heat until warmed through.
  5. Prepare corn by boiling or sautéing until tender.
  6. Grill the marinated flank steak on medium-high heat for 4-5 minutes on each side until cooked to desired doneness.
