  • 3 1/2 lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour (or gluten-free blend)
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered
  • Fresh thyme
  • Bay leaves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, cook chopped bacon until browned; set aside.
  3. Season beef with salt and pepper. Sear in the same pot until browned on all sides; remove.
  4. Sauté onions and carrots in butter for about 2-3 minutes. Add garlic and cook for another minute.
  5. Stir in tomato paste and flour; cook until fragrant.
  6. Add apple vinegar, scraping the bottom of the pot for flavor. Incorporate beef stock, thyme, bay leaves, bacon, and beef.
  7. Cover and bake in the oven for about 2½ hours.
  8. In a skillet, sauté mushrooms in remaining butter until browned; add pearl onions until golden.
  9. Fold sautéed vegetables into the pot; return to the oven for an additional 45-60 minutes.
