  • 1 ½ lbs lean ground beef
  • 1 cup diced onion
  • ¾ cup bread crumbs
  • ⅓ cup milk (or broth)
  • 2 eggs
  • ¾ cup ketchup
  • 1 Tbsp white vinegar
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil.
  2. In a large bowl, mix together the ground beef, onion, bread crumbs, milk, eggs, garlic powder, onion powder, salt, pepper, and tomato paste until combined.
  3. Shape the mixture into a loaf on the baking sheet or pack it into a greased loaf pan.
  4. Bake uncovered for 40 minutes. Meanwhile, mix ketchup and vinegar for the glaze.
  5. After 40 minutes, spread the glaze over the meatloaf and bake for an additional 10 minutes.
  6. Allow it to rest for 10 minutes before slicing. Serve warm.
