Ingredients

Scale
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2/3 cup peanut butter
  • 1 large egg
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 1/3 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the room temperature butter, granulated sugar, and brown sugar until fluffy. Add peanut butter and egg, mixing until well blended.
  3. In another bowl, whisk together baking powder, baking soda, salt, and flour; then gradually fold this dry mixture into the wet ingredients until just combined.
  4. Roll dough into 1-inch balls and place them on prepared baking sheets about three inches apart. Flatten with a fork in a crisscross pattern.
  5. Bake for 8-9 minutes until golden at the base but still soft on top. Let cool on the sheet for 5 minutes before transferring to a wire rack.
