  • 2 tablespoons instant espresso powder
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon baking powder
  • 3/4 cup all-purpose flour
  • 3 tablespoons heavy whipping cream
  • 1 1/2 teaspoons instant coffee granules
  • 1/4 cup unsalted butter, softened
  • 1/8 teaspoon salt
  • 1 3/4 cup powdered sugar
  • 1/2 cup dark chocolate chips
  • 2 tablespoons heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 pan with foil and nonstick spray.
  2. In a bowl, whisk melted butter and cocoa powder until smooth.
  3. In another bowl, beat sugar, eggs, espresso powder, and vanilla until fluffy.
  4. Mix in the cocoa mixture until combined.
  5. Stir together flour, salt, and baking powder; add to wet ingredients without overmixing.
  6. Spread batter into prepared pan and bake for 25-28 minutes or until a toothpick comes out sticky.
  7. While cooling, mix heavy cream with instant coffee until dissolved for frosting.
  8. Beat softened butter and powdered sugar; add coffee mixture until fluffy.
  9. Frost cooled brownies and top with melted chocolate if desired.
